DUTIES :

The Executive Chef oversees all culinary functions and is responsible for managing daily operations, including the development of menus, portion and inventory control, food quality, employee management and financial performance. As the Executive Chef, you will lead a team driven by culinary excellence. You ensure high standards are met by providing hands-on leadership, training, support, development, and management of the kitchen staff. You will drive menu design and kitchen creativity, design plating presentations for each dish, and ensure that all food meets the highest quality standards to create a memorable guest experience

Prepare gourmet food, fancy hors d’oeuvres and numerous other menu items as requested by clientele. Prepare and cook meat, fish, poultry, vegetables, soups, sauces, gravies, dressings, fruits, accompaniments and deserts by frying, baking roasting, broiling,

braising, steaming and boiling.

Plan and coordinate a variety of steps to ensure that all menu items are ready for serving at the proper time. Prepare menus items involving many steps, varied ingredients, special or difficult procedures and/or long preparation time. Oversee more than 350 catering contracts annually for upward of 275 guests per contract. Supervise the preparation of all foods served using various standard tests to determine that food is properly cooked and seasoned, assuring high nutritive value and good taste is achieved; responsible for prevention of waste/spoilage of food items. Supervise kitchen staff to include Cooks, Prep Cooks, and Food Service Worker, and Dishwashers. Instruct staff on proper procedures for cooking, seasoning, standardizing portions, garnishment and timeless.

Manage a budget in excess of 200k annually. Determine food cost of all items and special-order items. Evaluate cost control, sales and profitability of food operation. Provide monthly pricing updates necessary for menu planning and pricing.

QUALIFICATIONS REQUIRED :

Minimum:

  • High School Diploma or equivalent

  • Professional knowledge of the theories, principles, practices and techniques of cooking.

  • Skilled in planning, coordinating, time sequences of steps needed to prepare food on time without overcooking or wasting.

  • Ability to adjust recipes for the number of servings required is essential.

  • Willingness to undergo TB and Hepatitis testing.

  • Supervisory and leadership abilities

  • Must possess ServSafe Food Handler’s certification.

    Preferred: (In addition to the minimum qualifications):

  • Must possess a degree in Culinary Arts or 5 years’ high volume catering experience.

  • Excellent written and verbal communication skills

  • Knowledge of sanitation standards utilized in the food and beverage industry.
