Job Summary:

The Culinary General Manager is responsible for managing and developing all kitchen staff including a team of Sous Chefs in the areas of; safe food handling and preparation, overall quality production of menu items, maintenance of a clean & safe work environment, time and labor, inventory, employee relations, controlling COS and managing budgetary goals. The Culinary General Manager reports directly to the Food & Beverage Senior leadership.

Responsibilities Include (but not limited to):

  • Principal Culinary leadership responsible for training, development, supervision and effective communication of standards to all staff working with food.

  • Performs and tracks kitchen audits and Operational Review to ensure all policies and procedures are being followed and to maintain standards for all F&B facilities in food preparation, cleanliness and safety in accordance with applicable laws and regulations. Anything out of compliance is corrected and upheld with accountability.

  • Assist with the implementation, development, cost out, production, and training of menu items, including central support team guidance

  • Actively facilitates strategic priorities and achieves company objectives in safety, sales, service, quality, sanitation and cleanliness through training of employees and creating a positive, productive working environment.

  • Accountable for all employee relations and timely disciplinary actions, with proper documentation, training and guidance in a positive & professional manner.

  • Proficient in all positions in the kitchen, with an in-depth knowledge of culinary techniques.

  • Oversee ordering/receiving, cost transfers, variance reports, and inventory control for all food, beverages, supplies, etc. for dining operations.

  • Oversee your team in daily accountability for payroll exceptions, approvals, and labor distribution for dining operations. Proper scheduling of all kitchen staff within budgetary goals by anticipating business levels and reduction of OT, while maintaining the high standards of a safe, quality product and service in a timely manner.

  • Gives support to all Food & Beverage operations and performs additional duties as may be required.

Job Requirements

  • Education: High School Diploma or GED equivalent required.

  • Experience: 5+ years of restaurant experience with 3+ years of supervisory experience required.

  • Ability to work a flexible schedule including nights, holidays, and weekends.

  • Computer Skills: Purchasing Systems, MS Office Suite, Outlook.

  • Preferred Skills: Advanced Culinary Skill, Administrative prowess.

  • Must be able to communicate fluently in English, bilingual a plus.

  • TIPS, Serve Safe Food Protection Manager & King County Food handlers certification required within 30 days of employment.

  • Ability to lift heavy objects (50#+), walk and stand for long periods of time, and to perform strenuous physical labor in inclement weather conditions.

The expected pay range is $67,724 - $78,487 + annual bonus. This is the pay range we reasonably expect to pay for this position. Individual compensation decisions are based on a variety of factors.
