Clean and sanitize china, glass, silver, pots and pans, stainless steel, and entire kitchen area including walls, floors, drains and equipment. Report broken or damaged equipment for repairs. Dispose of trash from kitchen area properly and maintain dumpster area. Follow required safe cleaning and sanitizing procedures. Maintain all aspects of the Stewarding Department. Assist the Chief Steward with the maintenance and upkeep of all kitchens on property or at off-site events, as assigned. Work to ensure the cleanliness and sanitation of all kitchen areas to include: walk-in coolers, floors, walls, rolling equipment, small wares, china, glass and silverware. Clean exterior of all kitchen exhaust hoods and the filters; and banquet equipment such as queen marries and hot boxes. Perform bi-monthly deep cleans of each food preparation area to ensure total cleanliness and sanitation. Ensure that all china, glass, silverware, ice glows, serving trays, etc. are organized and heated as necessary prior to all banquet functions, and to clean and return the same. Assist Chief Steward as needed, with updates on current levels of glasses, china and silverware. Update inventory of china, glassware and flatware. Ensure dilution ratios and dispensing units are kept in working order. Communicate daily with the Executive Sous Chef and/or Tournant Chef and/or Chief Steward to provide an update regarding Steward Operations, including planning staffing requirements for banquet functions. Other duties and responsibilities as assigned.
