SUMMARYAssistant Food & Beverage Manager, Outdoor Dining

The Assistant Food & Beverage Manager, Outdoor Dining will work alongside the General Manager, Outdoor Dining to direct, coordinate, and administer Food & Beverage service operations to ensure profitability, quality standards and services, and guest satisfaction. The position will assist with managing the Outdoor Dining outlets including Fore & Aft, River House Pool and Blue Bird Food Truck.

ESSENTIAL FUNCTIONS

Essential functions for this position include, although are not limited to:

  • Familiarity with style of cuisine and service established for concept.

  • Familiarity with food service practices and procedures.

  • Circulate on the outlet floor, continually checking with the guests and the service staff to ensure that everything is to the guests’ satisfaction.

  • Handle guests’ complaints and thank the guests upon departure.

  • Monitor, supervise set up and maintenance of dining room area to ensure that it is up to standard.

  • Control flow of room by seating guests in each section by rotation.

  • Responsible for assigning and supervising all opening and/or closing side duties.

  • Make entries into logbook.

  • Assist with scheduling attendants and control of greeters, servers and bus attendants.

  • Conduct pre-meal meetings on a daily basis.

  • Participate in ongoing training of employees to ensure that employees continue to improve their performance.

  • Recognize outstanding performance by service personnel and handle discipline as per standard operating procedures.

  • Complete reports on production, fill out necessary requisitions and control distribution of necessary supplies.

QUALIFICATIONS

  • Requires high school education or equivalent. College degree preferred.

  • Minimum of three years relevant food & beverage management experience in a high quality, high volume establishments.

  • Two years supervisory experience preferred in a similar / equal setting.

  • Candidate must have a working knowledge of Italian food and wines.

  • Effective supervisory and communication skills.

  • Well organized and demonstrated strong problem solving skills.

  • Knowledge, understanding, and compliance of policies and procedures, job descriptions, daily memorandums, chemical labels, and other instructions.

PHYSICAL REQUIREMENTS

Most tasks are performed outdoors in variable weather conditions, including hot, cold, windy and wet weather. Temperature can be extreme but is usually moderate. Frequently works near moving/mechanical parts. While performing the duties of the job, the employee is required to reach with arms and hands; bend and stoop; remain at post standing for extended periods of time; required to lift and/or move up to 50 pounds; place and move chairs, umbrella, etc.
