Anoka Metro Regional Treatment Center is a secure inpatient psychiatric hospital serving adults with mental illness in a large, campus-based setting. The population also includes individuals civilly committed for specialized care, such as competency for criminal court (Rule 20), emergency 48-hour bed holds, and co-occurring mental illness/chemical dependency. Located just 15 minutes north of the Twin Cities metro, this modern facility offers compassionate, person-centered care in a pleasant environment appreciated by patients and employees alike.

The Culinary Supervisor will have the final responsibility in all food going out to AMRTC patients, ensuring food safety, quality and availability of product and substituting when needed. This employee is responsible for arranging all menus and making changes as needed in the absence of the dietician or food service supervisor.

Responsibilities:

  • Coordinates food preparation, tray line meal service and ware-wash operations, and inventory control.

  • Supervises and participates in the serving and preparing or cooking of food for all meals provided to the clients at the appropriate times and places with as few meal substitutions or shortages as possible.

  • Purchases food and supplies in accordance with approved purchase blanket orders and contracts.

  • Ensures compliance with all sanitation standards as regulated by State Health Department.

*This post will be used to fill two identical Culinary Supervisor positions at Anoka Metro Regional Treatment Center.

Minimum Qualifications

Two years of supervisory experience* in large-scale food preparation in a facility setting. ( *NOTE: An Associate’s or higher degree in food service management, hospitality, culinary arts, or related program from an accredited institution may substitute for one year of the experience requirement.)

AND

At least one of the following certifications or courses of study:

  • Certified Dietary Manager; or

  • Certified Food Service Manager or similar certification in food service management and safety from a national certifying body; or

  • An Associate’s or higher degree in food service management, hospitality, culinary arts, or related program from an accredited institution, including completion of courses in food service or restaurant management; or

  • Completion of coursework in food safety and management, including foodborne illnesses, sanitation procedures, and food purchasing and receiving.

Applicants who meet the above requirements will be further evaluated based on the following:

  • Knowledge of Minnesota Department of Health regulations on food preparation, storage, sanitation and safety.

  • Knowledge of food values and costs and the ability to estimate food requirements and maintain a budget.

  • Knowledge of clinical dietetic principles and practices including nutrition screening, assessment, and counseling skills.

  • Strong communication and interpersonal skills sufficient to effectively lead and instruct food service employees in the preparation and proper handling of meals and establish and maintain effective working relationships with staff and residents.

  • Skills in determining and maintaining an adequate and organized inventory of food and supplies.

  • Skills in using computer programs and software, such as Microsoft Outlook, Word and Excel.

Preferred Qualifications

  • Three or more years of supervisory experience in large-scale food preparation in a healthcare setting.

  • Experience using a menu system, such as PointClickCare Nutrition Management.

  • Experience applying provisions of collective bargaining agreements.

  • One or more of the following certifications:

  • ServSafe Food Handler or Manager/National Registry of Food Safety Professionals Foods Handler or Food Safety Manager

  • Parametric Certified Professional Food Manager

  • National Environmental Health Association Certified in Comprehensive Food Safety
